With the lockdown, we had to adapt our eating habits to the best of our ability and one of the habits that the average city dweller has trouble getting rid of is the Sunday brunch ritual. This cocooning moment that gives the feeling of really being on the weekend. The restaurants are closed, one of the alternatives is of course to prepare a brunch at home. If you are tired of eating pastries caught quickly at the baker but you do not want to spend 2 hours in the kitchen, I offer today a simple and fast recipe which has its own effect, whether in terms of tastes but also in terms of aesthetics with its vibrant colors.
I revisited the french toast (which is made of brioche here) with a cream composed of 2 fruits, orange and passion fruit, which will give you the punch you need to go on with your the day.
To add a little more pleasure, we will also prepare salted butter caramel that goes very well with the other flavors of the recipe. This caramel can also be stored in the refrigerator for several days if you have shown self-control at the for this dish.

In a bowl whisk eggs, milk, sugar and vanilla extract (optional).
Dip the brioches on both sides very quickly in the mixture.
In a frying pan heat a knob of butter and cook the buns for 2 minutes on each side
For the orange cream, mix the mascarpone with the orange juice and 3 tbsp of sugar.
For salted butter caramel, gradually melt the sugar without touching it when cooking.
Once the sugar has completely melted and it has a nice amber colour, melt the butter and mix.
Finish by adding the heavy cream (watch out for the splashes) and mix briskly.
Cook the caramel over low heat for 4 minutes, continuing to mix.
Plating suggestion: Sprinkle icing sugar on the bottom of the plate (optional), add the brioches, pour a spoonful of orange cream, a tsp of passion fruit on top and finish by decorating the plate with salted butter caramel.
You can also add other fruits, kiwi goes well with the other flavors in the dish.
